I have a CSV where the date column is YYYY-MM-DD But it seems there is no way to output that as a "Date" column type with wpDataTables? How do I create a custom Date Input Format? None of the ones available seem to output the date in the desired format.

Sorry to disappoint you but unfortunately that date format is not supported at the moment with the plugin built in features but we will add it for our next updates of the plugin.
For now you can try to make a query that will format the date and display it as format from selected format in wpdatatables settings page.

As long as the filtering and sorting still works for the Date (which it seems it does), we can wait for the next plugin update.

My mysql table column is type "DATE" in the yyyy-mm-dd format.
Within wpdatatables I have to change the data type to string to display properly, otherwise it shows up as DD/MM/YYYY
With the MM AND DD REVERSED so my 2018/10/01 appears as 01/10/2018
