I'd like to get user input, either from a box above the table, or from a cell in the table (less desirable), and then calculate a value based on the input. Then I'd like to display the calculated value in the table or above the table.
I watched this video, but it looks like wpDataTables has changed since then. Notably the "Editing" option used.

I'm having trouble figuring out how to do this. I don't want any other columns to be editable by the user.

We are located in Serbia and our working time is from 10:00 to 17:00 CET. business days.
If you want to use option User can see and edit won data that table have to be editable. With first option in table wizard Create a table linked to an existing data source table is not editable and you can't use this feature.
My suggestion is to use third option in table wizard and like that table will be editable and you can use this feature User can see and edit own data.
When you made this table you can set Editor input type to None for columns that you don't want to be edit by the user. For calculation in wpdatatables my suggestion is to take a look about Calculating totals, minimum, maximum and average values in WordPress Tables and also Formula.
