Each user associated table has a column defined for the user called user_id
For Column settings user_id
Column Settings, EDITING
Editor input type
Options
none
Single-value selectbox (selected option)
Column cannot be empty
Cannot be empty selected option
Predefined value(s)
Dropdown List showing current user number and null
I should like to default the above value to the placeholder variable %CURRENT_USER_ID%, but I cannot add this to predefined values as this is a dropdown list
Any help appreciated.

You can use placeholders like Predefined value if option Editor input type is set to One-line edit.

Yes because you use it with columns that have foreign key because editor input type have to be Single value select-box and placeholders you can use as Predefined values only for string column types.
You can take a look in our documentation about Creating Editable Tables in WordPress where users can see and edit only their own data.

We are located in Serbia and our working time is from 10:00 to 17:00 CET. business days.
Unfortunately at the moment is not possible to use Users see and edit only own data based on the specific column.
