Unfortunately merged cells are currently not supported when creating tables with our plugin and in order to make a table you will need to have column names.
So your file should look like this ( attachment)
You can also make SUM,MAX,MIN and AVG function - link to documentation.

Question 2. At the bottom of this attached spreadsheet, there is a section that combines the data from different cells is this also possible? Or maybe by making each one of the sections different table then combining the AVG for each section into and different table (note: again ONLY the yellow highlight area can be edited by the different users) Sample_table2.xlsx

Unfortunately something like this is not possible to achieve with the plugin built in features at the moment.
2.
Yes you will need to make an each table for this sections so the last section will be the last table with 2 columns and calculated fields.
