This plugin looks amazing - it's fundamental that I can add different woocommerce products to different services, and it looks like that isn't possible from playing with the software. Is it possible? If so, can you show me how?

Unfortunately something like that is not possible. WooCommerce integration allows you to use their payment gateways, send invoices and include taxes for your services.
