Please provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue. We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party. You can write credentials here just check Private Reply so nobody can see them except us.
This is the error that I get when I try to create a table on your site

The
500 Internal Server Error is a server-side error, meaning the problem
probably isn't with your computer, Internet connection or plug ins
but instead is a problem with the web site's server.
Can
you please investigate your server log and see if there is some
errors.
Also when I try to create a table on my side I can see that the table is created but it looks like this ( attachment)
You will see that the all of the columns are merged in one, probably because the CSV file is not properly created and because of that I assume that you hit the limitation in database for the number of characters for the column name and because of that you get that error.
So please check if the CSV file is properly created.
In case like this when you have table with a lot of data in it, out suggestion is to take a look at this link from our documentation where you can see how you can create a table with this amount of data.

Yes I know that I am hitting the limit. The problem is every time I reduce the limit by half it still doesn't work. when I got to 30, 000 Rose it was obvious that there's something more going on
This can depends on the number of columns also. I also reduced the number of rows to 30.000 and I was not able to create a table with 3rd option from the table wizard. Also you have a lot of columns which can cause the issue like this.
The file is very large and for this amount of data and columns our suggestion is to make MySQL table.
Import this file in our database and then make a query in our plugin like SELECT * FROM table_name.
When your data set is larger than a couple of thousand rows , it can’t effectively be loaded in the page from a Google Spreadsheet, a CSV or Excel file, or other sources. Each of these methods first reads the data from the source, and then prints out the complete table data on your page; so, as the row count grows, it makes both the page generation time on server side and the page load and initialization time on client side, slower and slower. If your host has a certain memory or timeout limit defined for PHP scripts, it can ‘break’ the page, because the script would try to allocate more memory than it’s allowed.
Then the best option is to create MySQL table.

Can you please tell me which version of our plugin do you use? Is it 2.2.2
If it is 2.2.2 version can you please update to 2.2.3 version and tell me do you still have the same issue.

You can follow this guide :
1.) Download zip from this link
2.) Use FTP to open /yourwordpressfolder/wp-content/plugins
3.) Delete existing wpdatatables folder.
4.) Upload previously downloaded wpdatatables folder through FTP to plugins folder (unzip it)
5.) Go to WP-admin panel, open Plugins section.
6.) Deactivate wpDataTables, and then activate it again.
IMPORTANT: Do NOT delete the old version from WP-admin (by clicking “Delete” in the plugins page). If you do, you will lose all your tables!

Are you saying that I should manually create the table? If so how do I import the data?

The best solution in this case would be to use some tool/application
If you are on a Mac you can use Sequel Pro application and just select which database you want to use and just import the file to the database.
The Sequel Pro will make a table in the database and then you just need to create a table.
Add from data source-> MySQL table _> SELECT * FROM table_name.
