When disabling a field from edit and double clicking the field, the text of the field is changed to let you know it cannot be changed, but after that, it stays like that until a refresh is done.
If you change the text to let the user know it is read-only field it is great, but after 2-3 seconds it should return to the original text, or not change at all.
Sorry but I did not quite understand what the issue us, can you please describe me more or send me some example/screenshot so I can take a look and give you my suggestion.
4. The data in the fields is replaced by some kind of string "filed cannot be edited", I'm not near the environment right now so I don't remember the exact text.
5. You will see the string hide the field data until you refresh the table
Yes that is normal behavioral when you set Inline editing and turn of editing for some columns. If you click out of the table or refresh the page that string will be gone.
Sorry to disappoint you but unfortunately something like this is not possible with the plugin build in features at the moment and it require some code customization of the plugin.

I changed the table to be inline editable, and prevented the name column from edit.

I mean that the the fields that are not editable should act the same as if I turned editing off for the entire table,
you can click on it nut nothing will happen.
It can be an option, but I think this is the best behavior for the user.

If the column is not set to be editable then that column will not appear in the edit modal at all.
As I understand you want for that column to be visible but it will be disabled for editing.

Yes but while you allow "inline" editing the column is visible, and when you double click it you get "field cannot be edited"
I don't want this output, simple ignore the double click, just as you would if the the entire table was not editable
