If chart option is not available out of the box, it can be changed just using wpDataCharts callback. You can take a look at this page and see examples of using callback.

How do you change the chart series color for charts, including Donut / Doughnut charts? For example, Google Donut chart colors can be changed through code but i don't see that in your plug-in (reference https://developers.google.com/chart/interactive/docs/customizing_charts)?
Also, how do you change the fonts for charts, including Highcharts?
