for my site I do not want to use the highcharts cdn. Instead I would like to use my self hosted highcharts.js file (like the Chart.js). How do I achieve this?

Thank you for your purchase.
You have to download all highcharts files that we are using form code.highcharts.com and insert in files and then replace path in all functions wp_enqueue_script that contains code.highcharts.com in files
wp-content/plugins/wpdatatables/controllers/wdt_admin.php
and
wp-content/plugins/wpdatatables/source/class.wpdatachart.php
