Hi,
My customers are speaking french and I need my table to be fully translated.
I switched the language to French but the 'date range' filter shows the labels are still "from... to...", and the calendar is in english as well.
Is there a way to change that or a workaround ?

Yes you can change it. Look for 'From' and 'To' in file below and change it for your needs.
In file ../wp-content/plugins/wpdatatables/source/class.wdttools.php around line 251 and 290 you will find this
'from' => __('From', 'wpdatatables'),and this
'to' => __('To', 'wpdatatables')About the language in datepicker, please take a look about that on this ticket.

Yes that will be overwritten in next update so you have to came back and do it again. Unfortunately there is no option that you can do it with CSS.
