I'd like to show a table for a basic search page showing just a few columns visible, but linking to another page (e.g. SHOW CONTACT DETAILS) that shows that SAME table with all of the columns visible. What would be the best method to achieve this?

Sorry to disappoint you but unfortunately something like this is not possible to achieve with the plugin built in features at the moment.
My suggestion is to duplicate that table and make desired changes to the second table and paste the shortcode of that table on the other page.
