Is there a way to get a running visible row count down the left side of the Table so that the visitors to the website will see how many are attending their location? Obviously, this would have to dynamically adjust with the Search filter.
Any thoughts on this one?

If I understand you well you have already that functionality in below the table in left corner where Is shown information how many rows is currently showing and also total count of rows in that table. When you filter table this data will be dynamically changed. If this is not what you looking for please explain me more or send me some screenshots and I will gave you my suggestion.

Yes you can. In file wp-content/plugins/wpdatatables/source/class.wpdatatable.php around line 2772 you will find this
and you have to replace with this
This will be overwritten in next update so you have to come back here and do it again.
