You can take a look at our documentation about wpDataChart callbacks where you can see how you can customize the charts.
Some of the charts that we are using does not have built in option to change the color of the series, but you can achieve this by writing the script using our wpDataChart callbacks.
There is an API for all of the chart engines so you can take a look.
