The setting that enables you to choose whether a sort is ascending or descending has disappeared?
It's in the docs, but not present in any field of a variety of types...
Right. It seems that you can only do this if you "sort column" on load.
Would it be possible to set a column to sort descending on click, rather than always ascending?

Yes you can set with option Use as default sorting column to sort specific column on load table. If you want to on click on column header sort only one direction that require some code customization.
