Is there anyway to alter the default settings for when creating a number of tables and charts eg I want the next 10 tables I create to (a) not show table title on page, (b) allow collapsing on mobiles and tablets (c) not "show x entries" dropdown and so on.
Currently I am having to go in and alter many of the default settings for each individual table/chart - It would be great to be able to alter the default settings once - create say 20 tables and charts with those new defaults without altering each table and chart individually and then reset the defaults as required for the next set of tables/charts

Unfortunately at the moment there is no built in features for something like that. What can you do is to duplicate table and settings will be the same. Also are available duplication's for charts.
