When I save a date, the format is yyyy-mm-dd in MySQL.
Is there any way to save it as dd/mm/yyyy or dd-mm-yyyy?

You can change date format in wpdatatables with option Date format in main settings of the plugin.

It is changed to 15.07.05 (d.m.y), but in DB it is saved as 2005-07-15.
My question is about saving the data with the format dd/mm/yyyy or dd-mm-yyyy.

Yes it is saved in that format because that is the default date format of mysql. You can take a look how to change that format on this link.
