Is there a custom CSS Class(es) you can apply (https://wpdatatables.com/documentation/general/table-configuration-page-overview/#column-settings-display #7) to define the column widths via % on the column settings?
Ideally if we have two columns we would like to define the width of Column 1 as 70% and Column 2 as 30%

Thank you for your purchase.
If you take a look at a tooltip you will see that you can enter the % sign for the column width. (attachment)
As for the custom Css class, you must give all of the desired columns a Custom CSS class and then write the code to set the width of them.
Do not forget to add !important tag at the end of it.

Can you please tell me is the scrollable option is checked in the table settings (attachment)
If Scrollable option is checked the Limit table width option would not be visible and the width option in the column settings (from my last attachment) is only visible if the Limit table width option is checked.

Enabling the Scrollable option under the Display settings for the table doesn't show the width settings in the column settings.
I have attached screenshots of the settings we are using for display

Enabling the Scrollable option will not show the column width, sorry if I did not explained better below.
If you disable Scrollable option you will see Limit table width option, If you enable Limit table width option the column width option will be visible in the column settings.
