Just add this code in Custom wpDataTables CSS under the "Custom JS AND CSS" in main settings of wpdatatables.
td , th{ text-align:center !important; }This will we applied on all tables, but if you want to specific table than just insert this css code between style tag on page where is that table(<style>code here...</style>)
