Everything is working great with your wpDataTables. My organization is very pleased with all the important tabular data we're able to display on our website.
I would, however, like to further expand on the application. I want to be able to do something you mentioned to another customer last March.

Is that available? That would sure add a lot of "power" to my application because I could put our plant production "real-time" data (updating every 10 minutes or so) in a Table and display is nicely in Headers, etc.

Unfortunately shortcodes for single cell is not yet available. We developed new Addon and waiting for its release and we also added some features that are requested a lot of times from our customers for the upcoming update. The single cell shortcode is something that we are looking for to include for future updates of the plugin.
