I would like to be able to show a last updated date/time as a part of the header or footer of the table display for each table. I do not seem to find these options in the documentation or FAQs. Is there a simple way to do this? Our users will be randomly updating this information and the dispatchers that will reference that data need to know if the updates have been made for the current day. These are tables that will be updated each day and sometimes as needed throughout the day by the different units across the state of Florida.

Unfortunately something like this is not possible with the plugin build in features at the moment.
As a workaround I can suggest you to take a look at our documentation about conditional formating where you can set a rule for date columns to be %TODAY% and color that column to let you know that this entry was changed that current date.
