I have a feeling it's by clicking in the column settings for sorting, but when I click on there and filter through data, sorting, filtering, etc., the page goes blank, as if it's not loading whatever is supposed to be there for me to choose from.

The newer version of this that I have downloaded looks a lot different than the backend version of the clients or I would be able to find this a lot easier.
On a second note, it might not be in your wheelhouse of assistance, but if you could that would be REALLY helpful. On the functioning one, the first column shows as a downloadable link to that pdf, where my version shows as like the hard-coded pdf url and non-clickable "download" option. If you know how that functions it would be much appreciated as well. Looking at their current one, they have for this section "Column Type: URL Link" ... this has to be the fix right?

Minimum required PHP version for wpDataTables is 5.4. but our recommendation is to install lates one(7+). You can check your PHP version on wpDataTables settings page under the Info tab.
If it helps, when I first open my table, on the top I CAN swap between Data Source, Display, Sorting and Filtering and Table Tools just fine.
But, if I then go down to my table options and click on a column settings where I am having my original problem of them not displaying, if I THEN go back to the Data Source, Display, Sorting, etc. it does NOT display anymore.
So it's like it wants to work one time, but when trying to go to another, it stops working altogether.
Can you try to change theme and disable other plugins and see if issue is gone? There is a chance that there is some conflict between plugins or theme.
I am replicating a client's website. As you can see here, they have your plugin functioning nicely.

Can you tell me which version of php is installed on server?
Do you have some errors in browser "Inspect element" when you open column setting?
Yes in column settings you have all option that you need to achieve that you want.

Well, that would be great if I could see anything displayed when I hit the info tab. But I can't.
I just spoke to bluehost and we did have 5.6, but he updated it to 7.0 but I am still having the issue.

Thank God it wasn't the theme or I would have cried haha.
For what it's worth, it was a plugin called "Breadcrumb" that was conflicting with it.
