We would like to serve our content, including tables and charts we made with Wptables to partner sites. Is this possible? We were thinking of using WP Rest Api for this.

Sorry to disappoint you but unfortunately something like this is not possible with the plugin build in features at the moment and using WP Rest Api would not do the trick.
