Advanced filtering is a special feature of wpDataTables which allows frontend table users to filter the data in the tables by the values of each individual column.
You can set default value of the select box in field Predefined value(s) under the filtering in column settings, but only with the values from that column.
Unfortunately its not possible to add all, but if you leave blank its behaves like you select all data.

Yes you can set default value to dropdown filters in field Default rows per page in "Display" settings of the table. (attachment)
