is there a was to have a formula calculate the days a record has been posted on the table (since the day it was created) and display the number of days in the columns?
Probably it can be done with both of your solutions but I can not tell you precisely the solution because we did not try to implement or to make some similar function. This feature have a point and it is already on our TODO list but for now we are releasing two addons and I hope that it will be included for our upcoming updates.

1- with hooks and filters with the developors info within wordpress
or
2- with triggers and other things on the mySQL side
