This is probably a silly question, please forgive me. I have a header label that is quite long and its causing the table to be unnecessarily wide - is there a way to put a line break in the header? I can't change the value to shorten the header that way. The site is protected so I can't give a URL, but please see attached.
Second question, how do I center all alignment for all cells in all tables on the site?
About the header: Sorry but it is not possible at this moment. We had that feature in previous versions that you can add break tags in header but due to some security reasons we disable it.
About center alignment :
Can you please try to add this code in Custom CSS field in wpdatatables settings page

One last question, if I needed to merge a row within a table, how would I do this? I have attached a screen shot of what I need to achieve - please let me know if this doesn't make sense? I need to merge the "SOLID ROUND TO SOLID ROUND" cell.
Sorry to disappoint you but unfortunately we do not have option to merge cells in our plugin features, for now. This is a common request and it is on our TODO list to implement it for future versions, but it requires a lot of testing to be sure that it would not cause any issues with themes.
