This is the code which you can put in Custom CSS field on wpDataTables settings page.
This is for the page pagination you can change the color that you desire, in this example it is red:

.wpDataTablesWrapper .dataTables_paginate {
color:red;
}

For the "showing X of X entries"

.wpDataTablesWrapper .dataTables_info{
color:red;
}

"Show X entries" and "Search"

.wpDataTablesWrapper .dataTables_filter, .wpDataTablesWrapper .dataTables_length {
color: red;
}

Give it a try and tell me does it work.
It is much more difficult if I can not see the table and change it directly so if your site go live let me know to take a look.
