Sorry to disappoint you but unfortunately something like this is not possible because we do not have seconds or milliseconds in our build-in functionalities at the moment. There are some requests for seconds and we are thinking to implement it in future releases. But it is not as easy as it looks and we have a lot of tasks for upcoming update at the moment, so stay tuned. Thank you for understanding.
Cool, is there anyway to stop the multiple choice picker, as it is in 5 minute breaks, it would be too inaccurate for my requirements. I would like the users to add it in manually or an option to be more precise.
I can give you a guide how to minimize the range of the time picker but I think that won't do the trick. My suggestion will be for that time column to set Editor input type to One-line edit so the users can add it manually. And in display header just mark the format to let them know how they should enter it. For example ( Time 00:00).
Is there a capability to add time in duration period?
Example in a triathlon, you have 5 set of timings, we would like to have each set on the table and the ability to have a total time at the end.
Timings need to have the ability to be split in 2.30.50.09 (Hour, minutes, seconds and milliseconds)

Is there a way to have the current time feature to be used for duration instead of am and pm,
Basically for a race, example competitor takes 1 hour and 30 minutes, it should show 01:30.
Is there a way to do this?

DId you try to change the time format in wpDataTables Settings page to 24h, after your example can show 01:30 without am and pm.
