The issue is here
.ui-widget-content { background: rgba(0,0,0,0.8); color: #fff; }
You can see that the color of the words are white and that is why you can not see them.
I change it to red (you can change it now like you want ) and you can find that code on wpDataTables settings page and in Custom CSS field.
Also this issue is related to the theme so I suggest you to maybe contact the theme authors and see what may cause this issue.
