You can try to enter this code in Custom CSS field on wpDataTables Settings page

@media screen and (min-width: 745px){
div.wpDataTablesWrapper div.wdtscroll {
overflow-x: none;
}
}

So the scrollable option will be only on mobiles.
You can change the number ( in this example 745) for your needs.

I created wpDataTables support page and for wpDataTable ID= 1 i checked the scrollable option so please take a look and tell me if everything is ok.
