Is there a way to have it be horizontally scrollable on mobile but not on desktop? On desktop I want the width to fit to 100% but then on mobile I want it to be able to be scrollable.

You can try to enter this code in Custom CSS field on wpDataTables Settings page
@media screen and (min-width: 745px){ div.wpDataTablesWrapper div.wdtscroll { overflow-x: none; } }So the scrollable option will be only on mobiles.
You can change the number ( in this example 745) for your needs.
