Hello,
I'm trying to override the styling using CSS, however this isn't working - the values in 'Colour and font settings' seem to override this.
My CSS is correct, and I'm trying to enter my custom CSS in the "Custom JS and CSS' tab under the wpDataTables plug in menu. There are no other CSS conflicts that I am aware of in other areas of my theme styling.
Can anyone assist?

Yes values from Color and font settings have !important rule added.
You can try to add !important rule on your Custom CSS and see does it helps.
